What are vegan flour tortillas and how are they different from traditional tortillas?
Tortilla or tortilla wrap originally belongs to Mexican cuisine. These are made with flour, baking powder, fat, water, or milk to knead and make a dough. Then small roundels are flattened to make thin fluffy bread. Baking powder and oil are optional though and easily can skip without changing much of the taste and texture.
Mostly the store-bought tortillas contain lard which is animal fat. However, we can substitute with any plant-based fat and easily make them vegan.
Store-bought tortillas also contain many chemicals and preservatives to increase their cell life. However, the homemade tortillas are all-natural ingredients available fresh.
Also in homemade tortillas, you can choose your flour or flour mix for the recipe. To give it a healthy twist you can also make the soft tortillas with wheat flour, unlike the store-bought all-purpose flour.
If you are gluten intolerant, choose your gluten-free flour, though the binding of GF flour will require some other ingredients. So completely customizable as per need.
Ingredients you need -
All-purpose flour - this makes fluffier tortillas. For a healthier option, choose wheat flour or 50 - 50 all-purpose and wheat flour, or multigrain flour. There will be less gluten and hence easy on the digestive system.
Baking powder - this is totally optional to make the tortillas fluffier. For flat tortillas skip the baking powder.
Salt - to taste
Olive oil - any neutral-tasting oil will work. Or Skip you are on a WFPB oil-free diet
Water - to knead a dough. Consider adding lukewarm water in place of room temperature.
How to make vegan flour tortillas?
Mix the ingredients
In a large mixing bowl place the dry ingredients like flour, baking powder, salt. Whisk them together.
Make the dough
Add oil and mix to crumble. Then add warm water slowly and gradually mix the ingredients till it forms a nice dough. The dough shouldn't be very tight or of flowy consistency.
Knead the dough smooth
Once the perfect dough is formed, knead the dough for 5 minutes by applying pressure through fist fingers. Knead until it turns soft. It shouldn't be sticking to the surface while kneading. If it sticks, add a few more flours (1 tsp at a time) to it and knead. Too much flour may make the tortillas dry.
Cover and rest the dough
Rest the dough for 10 - 15 minutes
Then cover the bowl with a damp towel and let it rest for 15 minutes. After 15 minutes take out the dough, divide it into equal portions of the golf ball or smaller.
Roll the dough into tortillas
Sprinkle some flour on the surface. Now with help of a rolling pin, try to flatten the roundel equally from all sides. This will result in a thin round tortilla. Roll the tortilla just before cooking.
Note - The gluten and elasticity in the all-purpose flour may make the dough shrink and come back slightly while rolling them. But if you are making the tortillas with wheat flour or multigrain flour, they won't shrink while rolling and will maintain their shape easily.
Cook the Tortilla
Heat a nonstick pan on medium heat. Once the pan is hot, place the rolled tortilla on it. In 20 - 25 seconds you may notice small puffs on the tortilla. Time to flip the tortilla now. Flip it and press lightly with a kitchen towel. This will help in even cooking of surface while the tortilla puffs. Cook for another 25 - 30 seconds. If the tortilla takes more time to puff, increase the heat slightly.
