How to make vegan zucchini fries?
Ingredients you will need
Zucchini - Can add summer squash also. Cut zucchini into wedges.
Flour -all purpose flour + corn starch
Plant-based milk - unsweetened almond milk
Bread Crumbs - Panko crumbs
Seasonings - garlic powder, onion powder, smoked paprika, Italian seasonings, salt & pepper
Olive oil - Substitute Avocado oil
How to make vegan zucchini fries?
Cut the zucchini into stripes or wedges
Cut the zucchini into halves and then each half into haves. Depending on the size of the zucchini, cut the quarters into halves again. Repeat till you get sticks of approximately 1 inch. You can keep them long or slit into half lengthwise.
Make the batter
In a bowl take all-purpose flour and cornstarch mix. Season with salt, pepper, smoked paprika. Add plant based milk or water to make a batter of coating (but not thick) consistency (substitute for eggwash).
Season the breadcrumbs
In a plate take panko crumbs and add seasonings.
Coat the zucchini
Take each piece, dip in the bowl of batter. Remove and drip off excess batter from the piece of zucchini. Roll the coated zucchini over the seasoned breadcrumbs. Remove and keep on a dry plate. Repeat for all the pieces.
Bake in the oven
Preheat the oven at 425 F. Grease the baking tray lined with parchment paper and place the breaded zucchini on the tray. Spray a little oil on the zucchini. Bake for 25 minutes or till it turns golden brown. Flip the fries halfway.
Air Fry the Vegan Zucchini Fries
Preheat the air fryer at 400 F for 3 minutes.
Place the fries in the basket and spray cooking oil. Cook for 12 - 15 minutes, flipping them halfway.
Storage & Reheat
It tastes best when hot and fresh. However you can refrigerate the leftover for 4 days when stored properly in an air tight container.
To reheat, place the fries in the preheated air fryer basket and cook at 400 F for 2 - 4 minutes, or in the oven for 5 - 7 minutes.
You can also freeze the breaded zucchini for future use. Store properly in an air-tight container or zip log freezer bag.

- 1 oven
- 1 Air Fryer
- 1 Baking tray
- 1 Oil Spray
Ingredients
- 2 medium zucchini skin on, cut into wedges
- 1/2 cup all purpose flour
- 2 tbsp cornstarch
- ½ - ¾ cup unsweetened almond milk or any plant based milk to make desired consistency batter
- salt to taste
- 1/4 tsp paprika
For crumbs mix
- 1 cup bread crumbs or as required to coat
- 1 tsp Italian seasoning
- 2 tbsp nutritional yeast optional
- salt & pepper to taste
Instructions
