Potatoes and Green Beans
Potatoes and green beans are two very popular vegetables. They are both nutritious, delicious, and easy to prepare. Potato is a starchy vegetable that is packed with nutrients like vitamin C, potassium, and fiber. They are a great source of energy. These potatoes and green beans are cooked in a little bit of oil while roasting, and there is no overcooking of the vegetables. I love to keep my seasonings simple with a few basic ingredients like salt, pepper, and garlic powder. You could also add in some other spices if you want.
While roasting the vegetables, we need to roast or cook potatoes first and while they are half done, we will be adding the green beans. This is because potatoes are hard vegetables and take longer to get cooked than green beans which are softer than the earlier and take lesser cooking time.
Ingredients you will need -
potatoes
green beans
olive oil
garlic powder
onion powder
paprika
oregano seasoning
salt & pepper
How to make?
Peel off the skin and wash the potatoes well. Dice them into bite-size pieces. Transfer to a bowl and add a little olive oil, garlic powder, onion powder, oregano seasoning. Toss to combine.
Preheat oven at 400 F. Line a baking tray. Transfer the seasoned potatoes to the baking sheet. Bake for 15 minutes.
In the meanwhile, chop the green beans into 3-inch pieces (depending on the size of potato pieces). Place them in the same mixing bowl, add more seasonings. Drizzle a little oil over them. Toss to mix.
Transfer the content to the baking tray with potatoes half cooked. Now cook for another 20 - 25 minutes, or till it's done well. You may like to give a stir once or twice in between to get even cooking. Though it's not necessary.
Once done, serve them hot/ warm for dinner or lunch.

- 1 lb potatoes
- 1/2 lb green beans
- ½ + ½ tsp garlic powder (potatoes + green beans) sub fresh minced garlic
- ½ + ½ tsp onion powder (potatoes + green beans)
- ½ + ½ tsp paprika
- 1 ½ tsp oregano seasoning or taco seasoning or any favorite seasoning
Instructions
