Potatoes and Green Beans

This roasted potatoes and green beans dish is perfect for a quick weeknight meal as well. It's a simple and no-mess side dish.

Ingredients
  

  • 1 lb potatoes
  • 1/2 lb green beans
  • ½ + ½ tsp garlic powder (potatoes + green beans) sub fresh minced garlic
  • ½ + ½ tsp onion powder (potatoes + green beans)
  • ½ + ½ tsp paprika
  • 1 ½ tsp oregano seasoning or taco seasoning or any favorite seasoning

Instructions
 

  • Peel off the skin and wash the potatoes well. Dice them into bite-size pieces.
  • Transfer to a bowl and add a little olive oil, garlic powder, onion powder, oregano seasoning. Toss to combine.
  • Preheat oven at 400 F. Line a baking tray.
  • Transfer the seasoned potatoes to the baking sheet. Bake for 15 minutes.
  • In the meanwhile, chop the green beans to 3 in 4ch pieces (as desired depending on the size of potato pieces).
  • Place them in the same mixing bowl, add more seasonings. Drizzle little oil over them. Toss to mix.
  • Transfer the content to the baking tray with potatoes half cooked.
  • Now cook for another 20 minutes, or till it's done well. You may like to give a stir once or twice in between to get even cooking. Though it's not necessary.
  • Once done, serve them hot/ warm for dinner or lunch.
