Zucchini Stir Fry

Zucchini stir fry is an easy and quick side dish for your vegan dinner menu. This takes less than 15 - 20 minutes. You can also add some yellow squash to the zucchini stir fry.

Zucchini is a healthy vegetable and is perfect to add to any dish. This belongs to the same family as cucumbers. Know some more facts about zucchini here.

Zucchini is rich with a lot of antioxidant properties. This is also a great source of vitamin A, B6, C, magnesium. Zucchini is good for the digestive system. This zucchini stir fry is -

  • versatile to substitute any spices
  • can add more other veggies

What all you need?

Zucchini & Squash - I have taken zucchini and yellow summer squash. You can also add some other veggies like broccoli, bell peppers, etc.

Onion & garlic - substitute - onion powder and garlic powder

Stir fry sauce - substitute - 1. soy sauce/ tamari + vegan oyster sauce 2. soy sauce/ tamari + hot sauce

Salt & pepper - salt to taste. Please note soy sauce also contains some salt.

Chilli flakes - This is optional. But will add on to the flavor only.

Vegetable oil

Any alternative spices - add some fresh herbs like thyme or rosemary while cooking zucchini. Also, you can add your favorite seasonings to the stir-fry.

How to make zucchini stir fry?

Heat oil in a skillet. Add sliced onion, garlic and saute on low flame for 20 seconds till they start to change color. Now add diced zucchini and squash, followed by the spices mentioned above. Cook on medium-high heat for 3 - 5 minutes till the zucchini is fork-tender. Don't overcook the veggies. And cook on high flame since zucchini will release the excess water making the veggies soggy.

Do you need to peel the zucchini?

No, you don't need to peel the skin. The skin will help prevent the stirfry turn soggy. You can clean them nicely and remove the head and tail portions.

What goes well with stir-fried zucchini?

Stir-fried zucchini goes well with many dishes. Serve it with noodles or plain steam rice. You can enjoy this zucchini stir-fry with meat items too if you are not vegan.

Ingredients
  

  • 2 zucchini diced
  • 1 onion sliced
  • 3 garlic pods minced
  • 1 tsp soy sauce or tamari
  • 1 tsp vinegar
  • 1 tsp hot sauce
  • salt and pepper to taste

Substitute for spices - 1

  • 2 tbsp stir fry sauce

Substitute - 2

  • 1 tsp soy sauce or tamari
  • 2 tbsp vegan oyster sauce

Instructions
 

  • Heat oil in a skillet.
  • Add sliced onion, garlic and saute on low flame for 20 seconds till they start to change color.
  • Now add diced zucchini and squash, followed by the spices mentioned above.
  • Cook on medium-high heat for 3 - 5 minutes till the zucchini is fork-tender.
  • Add some fresh herbs and enjoy.

Notes

No need to peel off the skin.
Don't overcook the veggies.
Cook on high flame since zucchini will release the excess water making the veggies soggy.
